Freshly squeezed lemon juice

Step 1
In a shaker, add the 6 fresh basil leaves.
Step 2
Pour the freshly squeezed lemon juice and omija syrup over the basil.
Step 3
Gently muddle the basil leaves in the liquid 5-6 times, just enough to release the aromas without excessively tearing them.
Step 4
Add the gin to the shaker.
Step 5
Fill the shaker with good quality ice (whole cubes).
Step 6
Close the shaker tightly and shake vigorously for about 15 seconds, until the outside of the shaker becomes very cold.
Step 7
Double strain (using the shaker's strainer and a fine sieve) the contents into a short glass (rocks glass) filled with fresh ice.
Step 8
Garnish with a fresh basil leaf, perhaps gently slapped between your palms beforehand to release its aroma.

Pro tip:
The key to a successful Basil Smash is the gentle muddling of the basil; if you muddle it too hard, it will release bitter compounds. Vigorous shaking is essential to emulsify the ingredients, chill the drink, and create a pleasant texture. Double straining ensures a smooth drink, free of basil or ice fragments.
